Matcha Biscuit Recipe

Enjoy the crisp taste of cookies with the unique flavor of matcha tea!
Ingredients (makes about 20 pieces)
- Unsalted butter: 100g (left at room temperature to soften)
- Sugar: 50g
- Egg yolk: 1
- All-purpose flour: 150g
- Matcha powder: 10g
- Pinch of salt
- (Optional) White chocolate chips: 50g

- Preheat oven to 170°C.
- Line a baking sheet with parchment paper.

Prepare the butter
Place the butter in a bowl and use a whisk to cream it until light and fluffy. -
Add sugar and egg yolk
Add sugar to the butter and mix until the mixture is light in color. Then add the egg yolk and mix well. -
Add dry ingredients
In another bowl, sift together the flour, matcha powder, and salt. Gradually add this mixture to the butter bowl and use a rubber spatula to gently combine. -
Form the dough
Once the flour is completely incorporated, gather the dough with your hands until it comes together. If desired, add white chocolate chips. -
Chill the dough
Wrap the dough in plastic wrap and shape it into a cylinder 3-4 cm in diameter. Place it in the refrigerator for 30 minutes to an hour. -
Slice the dough
After chilling, slice the dough into 5mm thick discs and place them on the baking sheet, leaving some space between them. -
Bake
Bake in a preheated oven at 170°C for 12-15 minutes. Be careful not to overbake, as their color will not change much. -
Cooling
Leave the cookies on the baking sheet for 5 minutes after baking, then transfer them to a wire rack to cool completely.
Tips
- Matcha Concentration: You can increase the amount of matcha powder for a stronger flavor, but be careful not to make it too bitter.
- Storage: Store cookies in an airtight container away from moisture. Best consumed within a week.
